- Frosting
- 1 ½ cups (340 g) unsalted butter, softened
- 5 cups (600 g) powdered sugar, sifted
- ¼ cup (60 ml) whole milk
- 2 tsp vanilla extract
- Pinch of salt
- Additional gel food coloring for decorating (optional)
Instructions
- 1. Preheat oven to 350°F (175°C). Grease and line three 8-inch (20 cm) round cake pans.
- 2. Prepare the cake batter: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- 3. In a large bowl, beat butter and sugar until light and fluffy, about 3 minutes. Add eggs one at a time, beating well after each. Mix in vanilla.
- 4. Add dry ingredients in three parts, alternating with milk, beginning and ending with dry ingredients. Mix just until combined.
- 5. Divide batter evenly into six bowls. Tint each portion with a different color of food gel to create red, orange, yellow, green, blue, and purple batters.
- 6. Pour each colored batter into its own greased and lined 8-inch pan (if you have only three pans, bake in batches). Smooth tops.
