08 - 1/4 teaspoon smoked paprika

# How to Prepare:
01 - Preheat a grill or grill pan to medium-high heat, about 400°F.
02 - Lightly brush each ear of husked corn with vegetable oil to ensure even charring.
03 - Place the corn directly on the grill grates. Grill, turning occasionally, until charred and cooked through, approximately 12 to 15 minutes.
04 - In a mixing bowl, whisk together mayonnaise, sour cream or Mexican crema, minced garlic, lime juice, chili powder, smoked paprika, and salt until completely smooth.
05 - Once grilled, remove corn from heat and, while still warm, brush each ear generously with the prepared sauce.
06 - Top the sauced corn with crumbled Cotija or feta cheese and chopped cilantro. Lightly dust with additional chili powder and serve immediately with lime wedges.
